Atul Kochhar’s Tandoori Monkfish

TANDOORI MACHCHI
Tandoor Roasted Monkfish
Serves: 2
Ingredients:
400 grams Monk fish, cut into 2 pieces
2 tbsp butter for basting
Mixed salad leaves
Marinade:
Make a fine paste of all the ingredients in a blender
20 cloves of garlic
1 knob of ginger, lightly crushed
Pinch of saffron
50 grams grated cheddar cheese
1 tbsp Red chilli powder
½ tbsp Garam masala
½ tbsp Salt
2 tbsp Lime juice
100 grams Yoghurt
Roux:
1 tbsp Gram flour
50 ml Oil
Method:
Heat oil in separate pan and add gram flour to it and make a roux or
paste without burning.
Mix all the ingredients together with yoghurt and add fish to the
marinade for 1 hour before grilling or barbequing.
Preheat the oven or grill at 200C and cook for 10-15 minutes, basting
once or twice in between to keep the fish moist.
Serve with mint chutney, rice and seasonal salad.
